Method
Sift flour, salt, baking powder, mustard powder and cayenne into a bowl
Rub butter into the flour until the mixture resembles fine breadcrumbs
Add the 100g of the cheese and combine with a knife
Add the milk gradually and mix to a soft, but not sticky, dough with a knife
Roll out on to a lightly floured work surface. Knead lightly until smooth
Gently roll out to about 2cm thick and cut into 5 or 6 rounds with 8cm cutter
Place on a baking tray, glaze with a little milk and sprinkle with the remaining cheese
Bake at 200°C / 180°C fan / gas mark 6 for about 15 minutes or until well risen and golden
Cook on a wire rack
