The Dairy Matrix

The Dairy Matrix concept is that the unique combination of nutrients, bioactive factors and structure in dairy and how they interact together, combine to produce the overall effect of dairy foods on health.

Scientific Overview of the Health Effects of the Dairy Matrix and a shorter summary on the Dairy Matrix are available to download.
