Method
Pre–heat oven to 180ºC.
Prepare vegetables ? peel and finely dice onions, de–seed peppers, crush garlic and slice mushrooms.
Gently heat oil and sauté all vegetables. Add tomatoes and tomato puree. Heat oil in a non–stick frying pan and prepare meatballs by rolling into even sized balls. Cook gently until brown.
Place vegetable mixture in bottom of casserole dish. Carefully place meatballs over mixture. Sprinkle with cheese and herbs.
Cook for 40 minutes.
