Northern Ireland Beef Stroganoff

Ingredients

1 Northern Ireland sirloin steak

Olive oil

4 mushrooms, sliced

2 onions, chopped

1 clove garlic, crushed

Northern Ireland half–fat butter

175g Northern Ireland crème fraîche

Lemon juice to taste

Paprika to taste

3 potatoes

Northern Ireland half–fat butter

Northern Ireland semi–skimmed milk

3 chives, chopped

Method

Cut the fat off a sirloin steak and cut into thin slices.

Heat a little extra virgin olive oil in a health grill, and cook the steak strips, seasoning with salt, pepper and garlic. Transfer to a hot plate to finish off later.

Sauté the mushrooms, onion and garlic in a little butter in a pan.

Pour crème fraîche into the sautéed vegetables and leave to thicken for a minute. Add lemon juice and paprika to taste.

Return the steak to the pan and heat very gently for one minute ? the beef should not be cooked any further.

For the champ, cut and wash the potatoes and slice into quarters. Steam the potatoes in a health steamer. Add semi–skimmed milk, butter and fresh chives to the boiled potatoes and mash well.

Serve on a warm plate with assorted vegetables and garnish with parsley and diced chives.
