Buttermilk Green Goddess Dressing

Ingredients

70ml NI buttermilk

120g mayonnaise

30g fresh parsley, finely chopped

30g fresh chives, finely chopped

1 garlic clove, minced

½ lemon, juiced

2 baby gem lettuce cut into quarters

4 radishes, finely sliced

½ cucumber, diced

½ red onion, finely diced

Optional half an avocado or sliced chicken breast

Method

For the dressing, whisk together mayonnaise and buttermilk in a small bowl.

Stir in the fresh herbs, minced garlic, and a squeeze of lemon juice season with salt and pepper and set aside.

Arrange the baby gem wedges on two plates.

Top with radishes, cucumber, and red onion.

Drizzle with dressing and enjoy.
