Brazilian banana muffins

Ingredients

1 ripe banana, mashed

95g self–raising flour

75g caster sugar

60g Northern Ireland butter

1 egg, beaten

30ml Northern Ireland semi–skimmed milk

Method

Grease and line a muffin tin for 2 muffins. Heat oven up to 170°C/ Gas mark 3. Melt the butter, sugar and vanilla in a saucepan over a medium heat

Remove from the heat and add the mashed bananas, mix well.

Add the beaten egg and mix well.

Stir in the flour and the milk.

Pour mixture into the prepared tin and bake at 170°C/ Gas mark 3 for 20 minutes. Leave to cool.

Serve with custard made with Northern Ireland milk.
