Cheesy breakfast burritos

Ingredients

4 corn tortillas

200g rump steak

4 scallions, chopped

4 eggs, beaten

1 red pepper, sliced

25g Northern Ireland butter

100g Northern Ireland mature cheddar, grated

Method

Toast the tortillas according to the packet.

Season the steak with salt and pepper and grill to your liking.

Rest and slice the steak.

Heat butter in a large frying pan over a medium heat and add the red peppers, cooking for 5 minutes.

Pour in the eggs and allow to cook gently for 2 minutes then turn to finish cooking.

Season the eggs and stir in the scallions.

Take a tortilla and spoon in a quarter of the egg mixture.

Top with a quarter of the cheese and roll up.

Serve with a dollop of sour cream mixed with smoked paprika.
